In the late 90’s there were food trucks – but there were called “roach coaches”. A big metal kitchen on wheels – serving all kinds of fried foods. Burritos, tacos, cheeseburgers, chili fries and bad coffee. This was food that came to you…and in our need to grab a bite to eat before going back to work, these little trucks did the trick. Sometime after 2010 these “roach coaches” turned into something spectacular. Foodies, chefs and entrepreneurs started making really memorable food in these little trucks. Dumplings, wraps, ice cream – you could get anything on a food truck. Now you’ll find smoothies, crepes, pho and panni’s. The food truck craze started in Los Angeles, but now you’ll see them all over the country.
